Dairy free? Vegan? Refined sugar free popsicles? Yes please…
You can’t seem to buy dairy free, vegan or refined sugar free ice lollies (popsicles for our American friends) anywhere. The few places that stock them are super pricey and packed in plastic.
Every year we host a big summer BBQ and ice lollies are star of the show but with my daughter following a dairy free diet, me trying to cut down on all refined sugar and my bestie being a vegan – I’ve had to up my game. In the past we have used plastic ice lolly molds or their silicone sister,s but in our bid to reduce plastic wherever possible, this doesn’t sit quite right.
How to make dairy free, vegan, refined sugar lollies without using plastic?
I’m just going to come right out and say it – I’m a bona fide genius! These little paper espresso cups make a generous ice lolly! Just pour in the mixture, freeze for around 20 minutes and then place a little wooden lolly stick in the middle – as it is part frozen already by this point the lolly stick will stand upright with no stressful balancing! All plastic free – fully compostible, and if like my kids, they like to let their lollies melt for some inexplicable reason…they can just let them melt right into the cup and then drink it. Job done.
So, here is my dairy free, vegan, refined sugar free ice lollies recipe that uses no plastic to make them, takes just three healthy ingredients and tastes the bomb. I promise.
To make the lollies
Simply pour your tin of coconut milk into a blender and add your choice of fruit (TOP TIP – if you use frozen fruit then your lollies freeze even faster) plus one tablespoon of honey or maple syrup. Blend until you get a super smooth puree and freeze! If you want to make three flavours then simply use 1/3 cup coconut mile to 1 cup fruit.
That’s it. Healthy, refreshing lollies in no time. All we need now is the sunshine!
Dairy Free, Vegan, Refined Sugar Free Ice Lollies Recipe
Dairy free, refined sugar free, vegan ice lollies/popsicles – super healthy and made using recyclable containers!
- 1 400g can Coconut Milk
- 3 Cups Fresh or frozen fruit ((blueberries, raspberries, strawberries, peaches))
- 1 Tbsp Honey ((maple syrup works equally well))
Set out your paper cups on a freezer proof tray
Add coconut milk, fruit and honey to a blender
Blend to a smooth puree
Pour the mixture into the paper cups – don't fill them right to the top as the mixture will expand on freezing
Freeze for approx 30 minutes or until the mixture begins to set – then insert the wooden lolly sticks and freeze for a further 2-3 hours or until completely frozen
To eat – remove from the freezer and cup your hands around the paper cups to help release the lollies.
